Pumpkin Seeds Fresh From The Pumpkin
i am planning to make pumpkin soup today. i have eaten pumpkin many times but never in soup form....
so, do you guys use the seeds in the pumpkin too? can you just roast the seeds a bit and add them to the soup? what about the skin? i might want to leave the skin on- after i cut off the gross bits....any of you use the skin too?

The seeds would need shelling, which is really fiddly.
Put the seeds out for the local birds and squirrels they'll have a field day! If you do decide to use the seeds, my I recommend dry roasting them in a pan til golden, wait for them to cool down and process to a powder. Add the powder to your soup to thicken and give a wonderful autumn flavour.xx Surely you could keep the shell for Hallowe'en? |

The shells are edible, apparently.
More recipes. The things contain lots of essential fatty acids, potassium, and magnesium. Enjoy.

I've always dry roasted the seeds straight from the pumpkin, never heard of 'shelling' them before.

don't be scared diablo. just buy spinach.....or rocket or any other leafy salad-ish green that you like and after washing it, chop it up as fine as you like and chuck it in when you serve the soup.
that is pretty much what i would do with soup i had bought. i do the same with dahl. i have never eaten kale and as much as i would like to....i just have never got round to it. these green wispy veggies lose their goodness so fast it is a shame to cook them anyway...and spinach/rocket taste damn good in soup.
