fried rice help
Right everyone, i need your help. i love chinese rice but i cant seem to make it. i mean i boil rice and try to fry it but it doesnt work. i have found recepies for fried rice but they all have vegatables in them and onion etc and i dont no what i need to take out to have rice. all i want is to have the rice recipe so that i can add the meat or anything i want really. so does anyone no the basic recipe for just the rice? i would really appriate it. Thanx

Fried Rice Recipe:
Serves 4 to 6 Ingredients: 4 cups cold cooked rice 4 tablespoons oil 3 beaten eggs 1 teaspoon salt Pepper to taste 1 scallion, chopped fine Directions: 1. Break rice apart with wet hands 2. Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated. 3. Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. i already knew that. but it doesnt seem right and wat is scallion? and ive never seen pepper in the rice i have

I make it something like this.
It always seems to be better if you have cooked the rice and left it overnight in the fridge. Don't know why.

i tired it, but i didnt put onion or pepper in. the egg is v noticble. i only used one egg as i only had one cup of rice which i made earlier and put in the fridge. ill taste it now....
well. my verdict is. its too salty for one and it doesnt taste like boiled rice any more nor fried. but a different one. hrmmm..... i duno wot 2 make of it. |

All I've ever done is fry the cooked rice in hot vegetable oil in the wok, add a beaten egg and a little soy sauce and stir continuously for about 2 minutes. Add more soy sauce to taste if necessary Tastes pretty much like the stuff in the Chinese.

i tryed the idea of just frying it. but it still taste like boiled rice. i did exactly what u said and it didnt work. maybe i should ask a chinese person. anyone no anyone that owns a chinese?

What I do is boil the rice , then transfer to a wok (which has very hot groundnut oil in), stir it and gradually add a beaten egg and fry for a couple of minutes. I also add a vegetable stock cube for taste.

It is essential you use cold cooked rice.I also cook the egg first like a pancake.Roll up the pancake when cool and finely shred.Mix in to the fried rice in the wok,then add salt and pepper and some chicken and a bit of soy sauce.
Oh,and the wok needs to be smoking hot.I think Chinese places use something like peanut oil which can be heated to a high temp.The BBC Good Food site is very good.

The trick is to boil the rice then leave it in the fridge overnight before using it to make fried rice.
