Seems to be one of life's great mysteries. Tried it myself many times and never got near to the taste they seem to manage fairly consitently in most takeways. I too would be interested in knowing the secret

Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine

Directions:

1. Break rice apart with wet hands
2. Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
3. Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.

I make it something like this.

It always seems to be better if you have cooked the rice and left it overnight in the fridge. Don't know why.

Use the basic recipe given by another poster, whisk the eggs and make sure you just beat them through when the rice is cooked - otherwise it's like ricey scrambled eggs. Omit the salt altogether and use really good quality soya sauce, always use soya sauce instead of salt in Chinese cooking. Keep tasting as you go, you'll get it right. Good luck

All I've ever done is fry the cooked rice in hot vegetable oil in the wok, add a beaten egg and a little soy sauce and stir continuously for about 2 minutes. Add more soy sauce to taste if necessary Tastes pretty much like the stuff in the Chinese.

I agree with you there it is much better after allowing to get completely cold before frying and as someone else here said cook in sesame oil. Do not cook for too long in the wok. just enough to get the rice piping hot.

What I do is boil the rice , then transfer to a wok (which has very hot groundnut oil in), stir it and gradually add a beaten egg and fry for a couple of minutes. I also add a vegetable stock cube for taste.

It is essential you use cold cooked rice.I also cook the egg first like a pancake.Roll up the pancake when cool and finely shred.Mix in to the fried rice in the wok, then add salt and pepper and some chicken and a bit of soy sauce.

Oh,and the wok needs to be smoking hot.I think Chinese places use something like peanut oil which can be heated to a high temp. The BBC Good Food site is very good.

Try asking in the 'Food for thought' section of the British Born Chinese forum. You don't have to be Chinese to join up.

I did a search but couldn't find much.

I suspect that you will get lots of answers, probably all different and contradictory.

The trick is to boil the rice then leave it in the fridge overnight before using it to make fried rice.

Only kidding. Peanut oil and fish sauce are also the secret to cooking authentic fried rice.
