Veggie Christmas grub

With all this talk about how to serve their ‘bird’ this xmas- curious to see what my fellow veggies cook up for their Christmas day dinner?

My mum cooks my brother and I: all the veg, dumplings, creamy onion sauce/gravy- and mozzarella and cheddar cheese in breadcrumbs fried to go with it- totally yummy!!

I have a half tonne of roast tatties, various vegetables, veggie gravey and some kind of nut roast to go with it. Oh, and some meat free stuffing. Lovely

This year, I'm trying a tomato and courgette nut roast. Served with all the trimmings, roast potatoes, (maybe mashed too if I can be bothered!), bread sauce, roast parsnips, red cabbage, runner beans, mmmmm!

I'll prob do some vege sausages too, just in case the nut roast is a disaster!

The breadcrumbed cheeses sound delicious!

I have no idea what to have! Its just me and my brother for crimbo day once he has finished his early shift. Neither of us are particularly good at cooking and he isn't veggie so its one veggie and one meat meal that has to be really easy to cook, any suggestions are very welcome!!

Not having a traditional roast but I'm normally content with just the vegetables and veggie stuffing. Once I went to town and made something quite spectacular. I've lost the recipe now though but it worked. It was kind of festive pie from a recipe in the Evening Standard.

How about roast potatoes with various veg and a few sausages? Just par boil the spuds, chuck them in the oven with some live oil and sea salt, cut up and boil a few veggies like leeks, carrots, spouts and swede, and grill some veggie and meat sausages to go with it.

Or beans on toast with a bottle of JD to wash it down with

Does it have to be traditional Christmas dinner? Can you order in the day before from the Indian?

Lose the nut roast - a throwback to the 1970s and quite revolting.

Why not have a lasagne, rice dish or something? And you can still have the veg.

But nut roast? I'm getting the dry heaves just thinking about it...

I rather partial to the Quorn apple sausages so that sounds pretty damn good, and of course easy to do some meaty one's for the brother! Beans on toast doesn't sound bad either tho lol!

These days, you can make or buy much better ones that the ones that were used to make the foundations of the Tower of London.

If I can't be bothered, one of those quorn roast things with stuffing but I prefer to make my own.

I made a home-made nut roast a couple of years ago but this time I'm making a puff pastry filled with mushrooms in a white wine and cream sauce.
