Hitman's Tim Olyphant was confirmed for the role of the town sheriff in November. Mitchell is expected to play his wife, reports Shock Till You Drop.
George Romero's original movie was released in 1973. Eisner's film will follow a similar story, with Olyphant's sheriff investigating the fallout when a biological weapon, which contaminates the water supply, starts sending locals crazy.
Mitchell's credits include Australian soap Neighbours, Vin Diesel's Pitch Black and horror Silent Hill.
