Byzantium centres on a small seaside town where a mother and her vampire daughter arrive and shock the locals.
The young girl forms a close relationship with Jones's character, who is dying of leukaemia and is forced to ask questions about life and death.
Jones will join Gemma Arterton (pictured) and Atonement actress Saoirse Ronan, who play the mother and the daughter respectively.
Neil Jordan will direct from a script by the playwright Moira Buffini, adapting her own play for the big screen.
Stephen Woolley and Elizabeth Karlsen will be producing the film.
Jones will be seen next in Contraband, with Mark Wahlberg in the lead as a security guard considering going back to a life of crime.
