"She was real state of the art. She had a tongue and pubic hair!" said Mortimer.
"There was a real respect for her on set. No one was allowed to make jokes about her or stick things up her nose. You can imagine the temptation to stick a cigarette in her mouth or put sunglasses on her... or worse!"
In the film, Mortimer stars as Karin Lindstrom, sister-in-law to Ryan Gosling's Lars, who becomes emotionally attached to a sex doll he purchases online.
Mortimer will next be seen in The Pink Panther 2. The actress has also been cast in Martin Scorsese's Shutter Island.
Lars and the Real Girl is released in the UK on March 21.
