Ronson, who worked with Winehouse on her 2006 breakthrough album Back To Black, has finally started the project two years after suggesting the idea.
Winehouse's father Mitch confirmed that the album was under way, despite past rumours that the singer would be dropped from the LP for taking too long to finish the songs.
He told The Mirror: "Over the weekend, [Amy] did three tracks for Quincy Jones. She's doing great."
Jones is best-known for his work with Frank Sinatra, Arethra Franklin and Michael Jackson's Off The Wall and Bad albums.
