The Australian star, who initially launched her singing career after taking part in Australian Idol in 2004, said that she was ready to quit the music industry after allegedly falling out with her old management in 2010.
Coulter told the Herald Sun: "I didn't even want to get on stage and sing. I was over it."
However, she has now collaborated with US musician Billy Man and releases new single 'Raining Diamonds' this week.
Coulter continued: "Of late people have only been talking about what I look like because I haven't had anything to talk about, so it's nice to have new music out. Music is my number one, it's my life, it's my everything. I'm enjoying challenging myself, I want to raise the bar and set a new standard for Australian pop artists.
"I respect Beyoncé and [Lady] GaGa because they push the limits and set the standard. No-one in Australia really sings, dances, writes and is so entrenched in the whole music creation process, I want to up the ante and prove we can be that good as well."
Coulter revealed that she is "very happy" in her two-year relationship with personal trainer Rich Harrison, who recently helped her drop 15kg. "I feel the most supported that I ever have been," she said.
"I encourage people to break up if they're in s**tty relationships. I've been in one, it's no good, the longer it drags on the harder it is to get out of it. 'Raining Diamonds' talks about knowing there's something better out there. You don't have to just settle."
