The 62-year-old will release This Kind of Love through the label on April 29.
Albums released via Hear Music are available to buy at Starbucks coffee stores as well as other retailers. Musicians on the label are played on rotation in the chain's shops.
The LP, Simon's first of original material since 2000, is inspired by Brazilian music.
"You don't have to be singing bossa nova or samba to get the essence of Brazilian music," Simon told Billboard.
"There are songs that fit no one rhythm or generic type or song progression."
Other artists on the Starbucks label include Paul McCartney, Joni Mitchell and Simon's ex-husband James Taylor.
Simon's previous hits include Bond theme 'Nodoby Does It Better' and 'You're So Vain'.
