Uribe tied the knot with long-term partner Claudia Solis, while dressed in a white silk shirt and a sheet. He cried during the ceremony, which was attended by 400 guests.
The wedding will be screened on the Discovery Channel, which is currently filming a documentary about Uribe.
In 2006, the 43-year-old weighed 1,230lbs, which earned him a Guinness World Record, but he has since shed 550 pounds with the help of his girlfriend.
Solis and Uribe swayed and held hands during their first dance, while the groom was not allowed to eat any of their five-tier wedding cake because of his current diet.
Speaking to reporters outside, Uribe said: "I have a wife and will form a new family and live a happy life."
