Coley Mitchell, was found with his pants down in a campus locker room on August 13, the Huffington Post reports.
The 32-year-old is reported to have resisted arrest and reacted violently when attempts were made to remove him from the room.
Exact details of what happened, including why Mitchell freed the monkeys, is not currently known.
He was released from police custody on August 17 and has since been dismissed by the university.
University spokesperson Jennifer Hilliard Scott said: "GHSU does not condone behaviour that conflicts with the research, education and clinical missions of the university, and employees are expected to conduct themselves at all times with integrity and respect."
The escaped monkeys were unharmed by the incident.
