The YouTube upload sees Ronnie Shalvis dressed as Altair performing parkour.
The montage has attracted nearly 500,000 views since it was launched. An accompanying behind-the-scenes video is also available to watch.
Previous popular real-life parodies include videos replicating GoldenEye 007 and Elder Scrolls V: Skyrim.
Assassin's Creed 3, the next video game in Ubisoft's franchise, will be released on Xbox 360, PlayStation 3, PC and Wii U this year.
