The star served customers at The Singing Chef restaurant in Paddington, London in the 1960s before getting her big break in the food industry.
Smith, now 68, will be seen revisiting the restaurant next week in a new BBC Two show Delia Through The Decades, which celebrates her successful career as a chef.
Speaking on the programme, Smith explained: "I used to have a miniskirt on. If I did waitressing and I couldn't pull the cork out of the bottle, I would put it between my ankles like this - and I used to get told off because I had a miniskirt."
Paying tribute to The Singing Chef's then owner Leo Evans, she added: "If it wasn't for this restaurant and if it wasn't for Leo I wouldn't have had a career at all."
Delia Through The Decades begins next Monday at 8.30pm on BBC Two.
