The Australian model announced the engagement during an interview on 2Day FM.
"He’s a keeper," she said about her 50-year-old fiancé. "It feels right. I think you know when you know."
The star recently posted on her Facebook page: "It's going to be a good year. My best friend of a long, long time just happens to be my soul partner; funny how life takes you where you are finally meant to be."
Esebag, a native of France, is the chairman of United Licensing Group. The firm owns the Playboy brand and also does business with Elite Modelling Agency.
Monk was previously engaged to Benji Madden in 2006. She was also linked to American Idol host Ryan Seacrest.
