The actor - who checked out of rehab this week after receiving treatment for "alcohol and other issues" - will reportedly drop the project in order to concentrate on his recovery full-time.
"David and [partner] Jeff [Beacher] have dissolved their partnership," his rep told US Weekly.
"David remains a big fan of the Beacher's Madhouse and the Roosevelt Hotel, but he is concentrating on his health and well-being right now."
A source told the publication that the dissolution was an amicable one as it was understood that Arquette did not want to relapse into drinking.
"David and Jeff had a really good talk and were in agreement that jumping right back into working in nightlife after rehab would probably not be the best move for David," the insider explained.
"Their primary concern is for David's full recovery and that's probably best done not in an environment where he'd be surrounded by alcohol right after Betty Ford."
