Carrey had been appearing on the show to promote his new movie Mr Popper's Penguins when he got on all fours, prompting Lauer to clamber onto his back before the commercial break.
Carrey also made a surprise appearance during Natalie Morales's news update on what is trending online, interrupting her speaking to hand her a bunch of flowers.
"Jim Carrey will be trending today for messing up the Today show newscast," she joked. "This will be a hit on YouTube and Yahoo and Google. Thank you Jim Carrey. I'm slightly embarrassed!"
Mr Popper's Penguins is based on the children's book by Richard and Florence Atwater about a family that lives with a group of penguins in New York.
When asked by host Ann Curry whether he agreed with the saying "never work with children or animals", Carrey laughed: "I love it! I love to be spontaneous so if something is going to throw me off the track of what I'm actually thinking about that's fine with me."
Mr Popper's Penguins opens June 17 in the US and August 5 in the UK.
