The performances at the Royal Albert Hall will mark the 25th anniversary of Andrew Lloyd Webber's musical, which first opened in 1986.
Evans will play the comedic character Ubaldo Piangi in the shows that run on October 1 and 2.
Sierra Boggess and Ramin Karimloo, who both appeared in Phantom's sequel Love Never Dies, will also appear, along with 200 other cast members.
Producer Sir Cameron Mackintosh said: "The success of the show has become the stuff of theatrical legend. Andrew and I felt we needed to create a really special performance to celebrate the 25th anniversary."
Wynne Evans reached number one in the classical music charts with his debut album A Song in My Heart in March. He has signed a six-album deal with Warner Records.
He also filled in for Alfie Boe at the Albert Hall for late composer John Barry's memorial concert.
