Lucinda Moyers is accused of illegally entering Trebek's room at 2.30am local time last Wednesday and taking cash, personal items and a bracelet given to the television presenter by his mother.
Jeopardy host Trebek gave chase when he realised he was being burgled, but fell to the ground and injured one of his Achilles tendons.
The 56-year-old Moyers was later apprehended by authorities, but Trebek's money and his mother's bracelet have not been found.
Moyers appeared in court on Monday and officially entered a not guilty plea to charges of felony burglary and possession of stolen property, The AP reports.
She has been ordered to return to a San Francisco court for a preliminary hearing on August 15.
Despite his injuries, Trebek was able to go ahead with a scheduled appearance at the National Geographic World Championship in Mountain View just hours after the alleged robbery took place.
