The actor will ride alongside members of the Tuskegee Airmen, a pioneering group of African-American fighter pilots, in a float sponsored by the United War Veterans Council.
Gooding will star in the George Lucas-produced film Red Tails, the World War II-era story of a unit of African-American combat pilots.
Five Congressional Medal of Honour winners will also take part in the celebration.
The New York City Veterans Day parade is to be held on November 11 on Fifth Avenue.
Red Tails, which also stars Terrence Howard and Bryan Cranston, opens on January 20, 2012 in US cinemas.
