The My Big Fat Gypsy Wedding star and Celebrity Big Brother winner had previously admitted affray over the incident and could have faced a three-year jail term.
A video played in court had shown Doherty, 52, bleeding heavily with a cut above his eye following an altercation with the 21-year-old Johnny Joyce.
Joyce and his brother Douglas, who had filmed the incident on his mobile phone, will be sentenced on January 13. The decision to separate sentencing was made to keep the parties apart, PA reports.
Doherty, formerly of Duchy Road caravan park, Salford, had been jogging in Ancoats, Manchester last June when Joyce happened upon him. During the fight, Joyce bit off the top part of Doherty's ear.
Police warned in March that Johnny Joyce and Doherty would be arrested if they went ahead with supposed plans for a televised fight.
