The cycling champion, who retired after winning a gold and a silver medal at London 2012, posed in a series of sparkling dresses and declared "the novelty of feeling elegant hasn't worn off for me".
Speaking further about the transition from an athlete to a celebrity, she recalled: "When I met Prince Harry, Wills and Kate... It was amazing that they knew who we were.
"Kate is so beautiful. I would love to have a blow-dry like that. Also, at a party recently, Kylie held my medals while I went on stage. That was odd."
However, Pendleton added that no matter how famous she gets, her family and fiancé Scott Gardner will always be her "priority".
"I would like a family one day and I've started feeling more broody recently, but I have a lot to do first," she said.
"I found my [wedding] dress in September. I met a designer - but I can't tell you who - and found just what I wanted. It'll be made to measure next year as I lost 11lb doing Strictly. I can't wait to get in the gym and get toned."
Pendleton also claimed that she had "never expected" to win Strictly Come Dancing with her professional partner Brendan Cole.
"The outcome was never that important to me, but it was fun to do something totally new," she said.
"I got partnered with the best dancer on the show and every week was a bonus - I never expected to be lifting that glitterball."
