The reality stars, who met on the 13th season of the ABC romance reality show, tied the knot at a ceremony in California last weekend.
Speaking to Digital Spy, Mesnick said: "We're going to be there for two weeks. Molly and I wanted something that was part relaxing, and part really fun and adventurous.
"We both always wanted to go on a safari, so we are going to hang out on the beaches in South Africa and also head into the jungle and see some wildlife. I can't wait!"
Malaney also confirmed that she had taken Mesnick's surname following the nuptials, with Mesnick adding: "We started a non-profit organisation called Project Parachute to help single parents, and we were signing some things to auction off. She signed her name 'Molly Mesnick' for the first time. It sounded pretty cool!"
The Bachelor: Jason and Molly's Wedding airs March 8 at 8pm ET on ABC.
