In March, the 22-year-old, who stars as Bridget Parker, announced that she was leaving the soap to return to studying an Arts degree at university.
"I didn't want to defer uni forever and, to be honest, I'd had enough of the Neighbours experience," she told the Herald Sun.
"Don't get me wrong. It was great but there are other exciting things I want to pursue. In the end, I figured I had to make a decision or give up the idea of uni forever."
However, Mignon insisted that she has not abandoned acting altogether, saying: "I'd like to do a play or a film. TV is hard work, really hard work. It just takes up so much of your time. So I don't know if I'd do another series for a while.
"Being on stage is a real thrill. And the pressure is so different. When you are doing TV, you have short bursts of pressure. Being on stage has a constant pressure but it's wonderful. I love everything about the process."
Mignon's final scenes as Bridget will air in Australia next week.
