Hayek has teamed with Merv Griffin Entertainment to devise an hour-long show with the production company's president of television Roy Bank.
"This is not a docusoap," said Bank. "The format is steeped in reality - it's not contrived. It's a unique storytelling angle on weddings that has never been seen on television before."
Bank, who said he was "flattered" when Hayek initially approached him about the idea, will executive produce with the actress and her business partner Jose Tamez.
The project will be pitched to both broadcast and cable networks.
Hayek split from her fiancé Francois-Henri Pinault last month.
