The former Blue star received the lowest number of votes from the public and left the show after more than two weeks in the jungle.
He told Ant and Dec that he was surprised to have stayed so long, saying: "I didn't think I would last this long. It was just nice to actually be a part of it."
Simon revealed that he found the mental aspects of the show a challenge and compared the camp to a "pressure cooker".
He added: "I didn't think that I'd snap as much as I did. I am usually a cool character."
When asked for his opinion of David Van Day, the singer admitted that he knew straight away that his campmate would be trouble.
"I saw it in his eyes. I didn't see him as honest," he said. However, he described David as a "nice man" and claimed that he expected him to make it to the final.
Simon said that he will be rooting for Martina Navratilova or Joe Swash to win the ITV show.
