The Young Guns actor was named King Of The Jungle after defeating former wrestler Torrie Wilson in last night's live final.
"This experience is head and shoulders and far to the left of anything I've ever done," he said.
"No movie set ever compared to this - this is the real deal and it's been an amazing trip."
Before announcing the winner, co-host Damien Fahey described the final result as "incredibly close". Earlier in the episode, viewers voted former NBA star John Salley into third place.
Phillips, 47, had been competing for his chosen charity Art Has Heart, an organisation aimed at providing university scholarships for needy teenagers.
Last night's instalment also saw most of the former jungle hopefuls returning, including Heidi Montag and Spencer Pratt, who sparked criticism after walking out of the camp four times. The only contestants who did not return were comedy duo Angela Shelton and Frances Callier.
