The former Pussycat Doll, who finished second in the competition, told reporters backstage at the event that she was "super excited" to be there.
Speaking after I'm a Celebrity beat Alan Carr's Chatty Man, The Only Way is Essex and The Graham Norton Show to be named 'Best Entertainment Programme', Roberts explained that the award meant even more as it was voted for by the public.
"I'm a Celebrity was a once in a lifetime experience and the public voted for us, so it means everything," she said. "That's how we're here, so we're super thankful to the public."
However, her co-star Helen Flanagan - who said that she would "love" to return to acting - admitted that she had been pretty confident.
"I kind of thought that we'd win, so I was actually not surprised," she joked. "I was really pleased that we won."
Meanwhile, Roberts was asked if she believes that her on-screen meal of camel penis had helped to secure the show's victory.
"I ate that camel penis with love!" she laughed.
