The Shameless star was axed by the celebrity chef following rows with fellow celebrities Anthea Turner, Grant Bovey and Ade Edmondson.
Latham was given 24 hours to prove himself after a meeting with White on Saturday, but he was finally sacked after he escaped from the celebrities' living quarters by climbing a wall.
Speaking about his exit, Latham insisted that he was "not fussed" and blamed his rivals for his early departure.
"I always said I didn't want to win. I just went on to learn under the world's best chef," he told The Sun.
"I was pretty much ready to go, so Marco just did me a favour I suppose. I don't think his decision was right, but then I wasn't going to argue about it."
He added: "I don't mind taking orders from Marco as I respect him and it's his kitchen. But I'm not going to take orders from people like that plonker Grant Bovey and his wife.
"I have no respect for him at all. We're like chalk and cheese - I'm a working-class lad from Lancashire, a million miles from the likes of him."
Latham also revealed that he was planning to open a gastropub in Barrowford, Lancashire called Jack's.
