The comedy, which also stars Courteney Cox, will focus on the life of a newly-single mother who has a 17-year-old son.
Cox has been cast in the lead, while Hopkins and Gomez are to play her neighbours.
Hopkins has previously appeared in CSI: Miami and Brothers And Sisters, while Gomez has just finished filming romantic comedy Wake.
