The actress, who previously starred as Alexis Meade in Ugly Betty, is to play a witch called Roxie, a sharp-tongued single mother.
She is joined by Jamie Ray Newman and former Lipstick Jungle actress Lindsay Price, who will play the remaining witches.
The show is loosely based on 1987's The Witches Of Eastwick and revolves around three women from the town of Eastwick who discover new powers after an enigmatic stranger arrives in the area.
Romijn gave birth to twin girls earlier this year.
