Bravo ordered more episodes of the hit reality show last June and it is due to return next month.
However, a recent trailer showed Giudice arguing with her fellow cast members.
Giudice, who is currently starring in The Celebrity Apprentice, has now told People that she is "still saddened by what transpired" during filming.
"One thing I have noticed is that some people tend to change when the cameras are rolling," she added.
Giudice also defended her own behaviour, though she acknowledged that she could have changed her behaviour in some instances.
"I live in the moment and nobody is perfect," she said. "We all make mistakes and in retrospect there are times where I would have handled a situation differently.
"That said, I live by a strong set of morals and family values and if I am being attacked I will stick up for myself. I am a strong woman and it is important for me to defend my character if it is being assassinated. It was very difficult to go through and especially hurtful when family is involved."
The new season of The Real Housewives of New Jersey, which also stars Melissa Gorga, Jacqueline Laurita, Caroline Manzo and Kathy Wakile, will premiere on Bravo on April 22.
