The 27-year-old dental student, who appeared on Brad Womack's second season of The Bachelor, will front the seventh run of the ABC romance programme from next Monday.
"I went into it having not low expectations but I didn't know what to expect," she told Digital Spy during a press call today to promote the show.
"After the guys got out of the limo, I was blown away! At that point I didn't know them that well but physically, they were gorgeous to me! After getting to know them, I have some great guys."
She added: "I personally think they are the best they've ever had!"
As for what she was looking for in a partner and whether her wishlist changed as she got to know the bachelors better, she said: "I think what I realised is I went into this saying I wanted just a good man and somebody who is loyal and a family man and I think as time went on, there were more things I saw in the guys that I wanted.
"The most important thing I realised was that I wanted somebody who made me feel good and feel like a woman and able to feel vulnerable. Definitely, as time went on, I started to realise more about what I wanted."
Among the 25 men vying for Hebert's affections are a winemaker, a cellphone salesman, a butcher and a "masked mystery man". A full list of the new bachelors and their occupations is available here.
The Bachelorette premieres Monday, May 23 at 9/8c on ABC before moving to its regular timeslot of 8/7c from Monday, May 30.
